Recipe Pkaila

The Pkaila is a typical hot dish of the Judeo-Tunisian cuisine. This mix of flavors and fragrances will please any palate. If you have no idea menu, try this recipe, you will not regret it.


Preparation

  1. Put the spinach in a large saucepan over low heat until absorbed water. Pour 1/4 l oil. Put very small fire. Stir occasionally, add oil to progressively what disappears. Add the chopped onion and cook until it becomes a green powder, and you hear cracking spinach under the spoon . This preparation is difficult, you are already ready in kosher butchers, it will keep for several weeks in the refrigerator.

  2. The day before, put the beans to soak in water at room temperature.

  3. Put the spinach into the pan without adding oil.

  4. Press the garlic.

  5. Add the coriander, mint, parsley, meat and beans.

  6. Cover with water.

  7. Bring to boil and simmer for 2 hours, stirring occasionally.

  8. Add the harissa and pepper to your liking.

  9. Serve with semolina
